I hope you enjoy the Super Songs of the 70’s Weekends as much as I do. The songs bring back so many memories, and I bought the records of many of them.

One such song hit #1 this week in 1974. “Rock Me Gently” was Andy Kim’s only hit to reach the top of the singles chart.

Andy was born in Montreal, Quebeck, Canada, on Dec. 5, 1952. His real name is Andrew Joachim (hence, the variation of his last name). He quit school and moved to New York at age 16, and had several hits in the late 60’s, including the platinum single “Baby I Love You” and “How’d We Ever Feel This Way”.

Bring on the pumpkins and Fall baking!  As you know I am always looking for ways to cut calories and this time of year it can be hard with the holiday’s fast approaching!  I am determined that I can have my cake and eat it too!  So I have searched the internet to find some yummy Fall recipes that taste great and are low, low, low in calories!  How low you ask?  How about 41 calories for a delicious Pumpkin cookie!  That’s right just 41 tasty little calories.  Today’s theme is all about pumpkins.   Ready , Set, bake….yum!!  Let me know what you made and how much you love it!!

Just 59 calories a slice...delicious!!

pumpkin oatmeal bread

 1 1/2 cups oatmeal
2 teaspoons baking powder
1 tsp. Ground Cinnamon
1 tsp. Ground Ginger
1/8 to 1/4 tsp. Ground Cloves
2 tbsp. cornmeal
¾ to 1 cup Splenda (to taste)
2 tablespoons hot tap water
1/2 cup pumpkin pureed
1/4 cup egg beater or 1 egg
1 teaspoon vanilla extract
1/4 cup unsweetened applesauce
1/2 cup skim milk

Preheat oven to 350.

Mix dry ingredients with wet ingredients. Pour into an 8 x 8-inch baking dish sprayed with Pam. Bake for 20 minutes or until inserted toothpick is clean. Very Moist!

This light and fluffy slice of cheesecake has a hint of fall inspired by my Pumpkin Spice Cream Cheese recipe. Quick and simple to make in under 10 minutes. You can further reduce the points by using fat free cream cheese if you wish, but I personally prefer using 1/3 fat cream cheese instead.

Pumpkin Spice No-Bake Cheesecake
Gina’s Weight Watcher Recipes
Servings: 8 Size: 1 piece Time: 10 minutes Calories: 239 Points: 5.25 ww points

  • 7 oz 1/3 less fat Philadelphia Cream Cheese
  • 1/2 cup pureed pumpkin (canned is fine)
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/4 cup brown sugar, unpacked
  • 8 oz Cool Whip Free, thawed
  • 9 inch reduced fat Graham Cracker Crust

In a large bowl using an electric mixer, whip cream cheese, pumpkin, vanilla, cinnamon, pumpkin pie spice, and brown sugar for a few minutes until fluffy. Add Cool Whip and whip until smooth. Spoon mixture into pie crust and chill for a few hours, until firm.

Took the kids fishing the other night–sort of.  When you take a 4 year-old and 6 year-old fishing there’s a lot of hook baiting, but fishing, not so much.

We used to live by Lake Travis and we would go fishing on a neighbor’s dock often, so the kid’s know it and love it.  We went to the Low Water Crossing Bridge below the Mansfield Dam and I’m not sure wha was going on because it smelled like raw sewage.

Other than that we had a blast!

1. Find nonverbal ways to connect with your partner after a fight.

Feelings of fear and shame drain blood from the area of the brain that regulates language, which means no one is making much sense. Bring your sweetie a cold drink (for example) to remind them that things are okay.

SCHOOL DAZE: Plenty Of Teens Can’t Name First President Of United States 

Kids these days.

Oklahoma high school students were recently surveyed and the results were rather disturbing.

Three-quarters of those surveyed could not name George Washington as the nation’s first president.

The questions on the survey were taken directly from the test immigrants have to take in order to become citizens of the United States. While 92 percent of the people who take the citizenship test pass on their first try — the Oklahoma students did not do as well. Only about three percent of the students surveyed would have passed the citizenship test.

The questions asked included:

   1. What is the supreme law of the land? The Constitution
   2. What do we call the first ten amendments to the Constitution? Bill of Rights
   3. What are the two parts of the U.S. Congress? House, Senate
   4. How many justices are there on the Supreme Court? 9
   5. Who wrote the Declaration of Independence? Thomas Jefferson
   6. What ocean is on the east coast of the United States? Atlantic
   7. What are the two major political parities in the United States? Republican, Democrat
   8. We elect a U.S. senator for how many years? 6
   9. Who was the first President of the United States? George Washington
  10. Who is in charge of the executive branch? President

I went to San Antonio this past weekend and attended the American Council of the Blind State Conference. It was a lot of fun; I got to see people I haven’t seen in years, and even went on a boat cruise on the River Walk.

While waiting at the San Antonio bus station to go home, I was standing in line to catch the 4:45 bus to Austin, when I realized I was in the wrong line. A lady who just happened to be in the vicinity asked if i needed help getting to the right bus. I said yes, thinking she worked there.

She took me to look for the right bus, and we discovered it hadn’t arrived yet. I found out she wasn’t a bus station employee, but was there to help put her daughter’s boyfriend on a bus going to Waco. She graciously stayed with me until we located my bus, and even got on with me to make sure I got settled. She even gave me a hug before she got off the bus.

I think sometimes we need to be reminded there are wonderful people out there, who are more than happy to lend a hand when they see someone in need. Call them angels, Good Samaritans, or just kind people, they pick us up when we’re down. I may never see this lady again (she did tell me her name was Michelle, and her daughter had the same name as my daughter Jessica). But I’ll never forget her kindness. I’m sure God will bless her richly for it.

It’s going to be an exciting weekend in Corpus Christi!  It’s the 6th Annual Conquer The Coast weekend and there is something for everyone!

The 6th Annual Conquer the Coast™ ride takes cyclists on a tour of the beautiful Corpus Christi coast. Join us on September 26, 2009 for a 25-mile cruise ride or a 65-mile ride with music and festivities. The 65-mile cyclists have an opportunity to compete in the Toughest 18-miles in Texas Time Trial along their route.  You still have time to be a part of this exciting event!

Last week, I had the chance to give a tour of the radio station to several students and teachers at the Texas School for the Blind and Visually Impaired here in Austin. I once attended TSBVI as a child, and had some wonderful experiences there. It was great to meet the group, and to have the chance to give back to the school I’ll have many fond memories of for the rest of my life.
